PROBLEM TO BE SOLVED: To provide rubber processing equipment constituted so as to precisely estimate the viscosity of a rubber composition during the kneading on rolls to improve the processability and quality stability of the rubber composition in a rear process, and a rubber processing method.SOLUTION: This rubber processing equipment is equipped with a pair of rolls 1 and 2 for processing the rubber composition R, a temperature sensor 4 for detecting the surface temperature of the rubber composition R and a pressure sensor 3 for detecting the rolling force due to the rolls 1 and 2. The data base of the viscosity of the rubber composition R is preliminarily formed in relation to the surface temperature and the rolling force and the rubber composition R is subsequently kneaded while detecting the surface temperature and the rolling force and the viscosity of the rubber composition R during the kneading on the rolls 1 and 2 is estimated on the basis of the data base.
